Ramacchino

Ingredients: pasteurised milk, salt, rennet, lactic ferments.

Ramacchino is a cheese made with carefully selected cow’s milk, from our own production. The cheese presents a few holes and is of a firm consistency. The characteristics of the product are: forms with amber-coloured rind, tending to deepen in colour as maturation continues, characteristic pale yellow cheese of a compact consistency and delicate flavour, tending to sharpen when more mature.
The best time for production is spring, up to late June. The milk used comes exclusively from Sicilian farms. The product does not contain preservatives.
