RED CHEESES OF SICILY

Ingredients: sheep’s milk, pasteurised milk, salt, rennet, lactic ferments, chilli pepper.
SHELF LIFE 210 days

Semi matured cheese of medium firm consistency, with an absolutely intense and lingering flavour, richly aromatic because of its maturing with finely ground black pepper on the whole surface. About three days after production it is placed in brine for 72 hours.
Afterwards the rind is completely covered with a thick layer of freshly ground black pepper which during the maturing of about 60 days, strictly on wooden boards, gives the particular spicy taste. The milk used comes exclusively from Sicilian farms. The product doe not contain preservatives.
